Cooking Pizza in a Woodfire Oven on the North Shore

You really don't need a woodfired oven to make great pizza. An electric or gas oven will work fine. But if you ever get the opportunity to make pizza in a wood fired oven...jump on the chance. In the following video you will get a taste of some of the pizzas that we recently created on Oahu's North Shore. All of the wood was kiawe wood, a Hawaiian hard wood. The Norht Shore is arguably home of some of the best surfing in the world. You will discover Wiamea Bay, Pipeline and sunset Beach, right down the road. The oven was built by my friend Paul who just had an inspiration that he wanted a pizza oven. not that he knew how to make pizza: he didn't. Paul creates the dough and allows his guests to go crazy with their pizza creations. Believe me everyone was practicing Pizza Therapy . Inferno's Wood Fire Pizza: Best Pizza in Hawaii?

Without a doubt, some of the best pizza in Hawaii, is being made at 951 North King Street, in Honolulu. The odor of fresh pizza being cooked in an outdoor wood fired oven is unmistakenable. There under a tent, in the corner of a parking lot, you will discover an amazing pizza operation. Two amazing pizzioli are taking authentic Neapolitan to the streets...literally. This is a portable pizza operation. A traveling pizza circus. Complete with all that you would expect and demand of great pizza. And if you are looking for wonderful pizza, you just found it. The owners, Kyle and John , do exude pizza passion . They care about pizza. They care about their customers Each pizza is handcrafted. Each pizza is lovingly created. All the ingredients are fresh. All the pizzas are unique. And the pizza is good. Really good. . For me it is all about the crust. The crust is thin with a slight char and a smoky flavor. First Stop: V Lounge, Honolulu, Hawaii

For the first stop of The Pizza Therapy Hawaiian Pizza Crawl, we stopped at V Lounge. We were there a little early and had a chance to meet Aker , master pizzaiolo and Blaine one of the owners. Aker stretching the dough. It's always great to speak with people who share your own passion for pizza. Aker and Blaine have the passion. We talked about Chris Bianco,   wood fired pizza ovens, New York pizza and also discussed Pepe's and Sally's Apizza (located on Woooster Street in New Haven , Connecticut.)   Aker explained that he was born in New Haven.   Hmm, I wonder if that had something to do with how the pizza turned out. Honestly, I was astounded at their extensive knowledge about pizza. These guys know their stuff. Aker , is a classically trained Chef who only recently started to make pizza. His last job was as a pastry chef at a famous Japanese Restaurant. As a matter of fact he never made pizza commercially until he started making pizza at V...
