Wacky Walnut Pizza from Pizza Therapy

Wacky Walnut Pizza from Pizza Therapy  Ok, to be truthful, there is nothing wacky about this pizza. The taste of the walnuts shine through on this very tasty pie. We created this by chance. And it worked. Ingredients or the dough: 4 cups of flour 1 teaspoon of yeast 1 teaspoon of salt 1 and 1/2 Cups of water. Mix ingredients together and knead for 6-8 minutes or until smooth and silky. Dough should be slightly tacky to the touch. If very tacky, add a bit more flour. If the dough is dry add a few drops of water. Put dough in a bowl or zip lock bag. Drizzle olive oil over the dough. (Don't completely seal the bag). Put the dough in the fridge and allow it to proof overnight. Dough can stay in the fridge for up to 4 days. Take dough out of fridge when you are ready to make pizza. Allow the pizza dough to warm up to room temperature. Simple Easy Pesto from pizzatherapy.com  Pesto is wonderful and refreshing. Use it for pasta, pizza or just spread it on a piece of ciabatta bread. The best thing about pest is how easy it is to make. Easy Pesto Ingredients for Pesto 2 cups basil (loosely packed) 1/4 Cup Pine Nuts 2-3 cloves of garlic 1/2 Cup Olive Oil 1/4 Cup Parmesan Cheese Salt and pepper Directions Add all ingredients to a food processor Pulse gently until everything is roughly mixed. Olive Tapanade Pizza

 Meryl shows us how to create a perfect pie using an olive tapanade. This is a fairly easy pizza to recreate. You will be using ingredients that are available anywhere. 1) Open can of olives and drain 2) Put olives in food processor 3) Add 2-3 Tablespoons of Olive Oil. 4) Add 1 Teaspoon of minced garlic 5) Lemon Zest 6) Pulse ingredients in Food Processor 7) Make dough for one pizza. 8) Stretch out dough 9) Spread Tapanade on top of dough 10) Add cheese (Assagio, Parmesan, Mozzarella combination or your choice.) 11) Top with rosemary and / or your favorite spices. 12) Cook in a pre-heated oven (500+ F.) oven for 8-10 minutes or until crust is brown. Aglio ed Olio: A Pasta for the New Year

Here is a great dish for you start of the New Year. An easy pasta with a very bold taste. Although this pasta contains anchovies, the taste is not overpowering. Give this dish a try and let me know what you think. Aglio and Olio is a family favorite. So easy to prepare, it is almost a sin! In our house, only fish was served for Christmas Eve dinner as well as on New Year's Day. On Christmas eve we ate lots of different kinds of fish. Baccala (dried, salted, cod fish), shrimp , Mama Grande's Stuffed Sole , fried calamari,   clam cakes , baked stuffed clams , eel (yes eel!), stuffed calamari , calamari salad , and on and on!! This pasta dish was always a favorite. We never could pronounce it correctly, but we still love it! Step 1 Saute the garlic. Every Christmas Eve, as we grew up, there was a huge meal of various seafood. This was a tradition was known in some households as the Feast of the Seven Fishes. Because we lived in New England, near the coast, fresh seafood was abundant. How to Make Stuffed Artichokes

This dish was one of my dad's specialties. Pulling off the leaves of artichokes and dragging them between your teeth was fun! Eating the stuffing was wonderful. The absolute best taste was the "heart". (Life is like eating an artichoke...) Ingredients 4 artichokes 1/2 Cup of Seasoned Italian Breadcrumbs (You can easily make your own by toasting bread, cursh bread, and add seasonings) 12-15 chopped olives (1 can) 12-15 chopped mushrooms (fresh taste better but use canned mushrooms if you must) 2-3 cloves of finely chopped garlic 1-2 Tablespoons of finely chopped Italian parsley olive oil salt and pepper to taste Directions Bang artichokes on counter (leaves down) to loosen leaves. Rinse in cold water. Remove stems. Peel and put aside. Remove and discard small tough leaves from bottom. Use scissors to remove sharp tip from each leave. Chop stems and chop mushrooms. The Pizza Therapy Dough Recipe

Over the years, I've had very good luck with this dough recipe. Feel free to experiment to make the dough that you like best. I have also included in this post a video of the dough making process. Making pizza can be an event enjoyed by one person or shared by a group of people. I have made "pizza for two" as well as given hands-on pizza demonstrations for over 70 pizza fanatics!
