The R Rated Pizza Video: Pizza is Sexy

During one of my conversations with Ed Ladou   (creator of Wolfgang Puck's Pizza as well as California Pizza Kitchen pizza ), he remarked: "Pizza is sexy". Ed went on to explain  how the popularity of pizza has really exploded. And how the image of pizza has changed dramatically over the years.  When Ed first started making pizza, everything was different. Ed knew pizza. He was a true pizza philosopher and master pizzaiolo. I wonder what Ed would have thought about the following video. I'm sure he would have said: "See I told you so..." And Ed, I miss you. You were a true original. I have to give this video an "R" rating. It's not for everyone. So be forewarned... But if you like pizza, then you will like this video. Yeah, I guess Ed was right all along..."Pizza is sexy..." You can watch a huge collection of pizza videos at Pizza Therapy. pizza on earth, Albert Grande The Pizza Promoter -->

American Pie: My Search for the Perfect Pizza by Peter Reinhart

Image
Peter Reinhart, James Beard Award winner. The following is a review of Peter Reinhart's book: American Pie: My Search for the Perfect Pizza . "Peter Reinhart starts his incredible pizza adventures in Italy and journeys across America in search of pizza perfection. To borrow a phrase from Bill Graham: “This book is not the best at what it does; it is the only book that does what it does!” Not only do we go on a quest to discover incredible pizzas, but we learn how to make them.! The first section of American Pie is the quest for pizza perfection. The subtitle should be “my search for the perfect “pizzaiolo” (pizza master), as Peter meets with a host of pizzaiolos who share ideas and philosophy about pizza. According to this book, there is more to pizza, than just throwing together flour, yeast oil, tomato sauce, cheese along with other toppings! The fact of the matter is that you must bake part of your heart into each pizza, to reach brilliance! (Albert's sidebar: "I ...

Interview with Jeff Ruby Co-Author of Everybody Loves Pizza

With Everybody Loves Pizza , Jeff Ruby and his co-author Penny Pollack , take their book on a unique pizza quest. There are many things to like about this book. For starters, Ruby and Pollack break down American pizza into four distinct zones: California , Chicago , New York and New Haven , (Connecticut). After discovering that fact, I was hooked! The pizza tales and side-bars make this a fascinating read. The historical perspective of the unsung heroes of pizza will enlighten you. There are recipes and over 500 pizzerias recommended. The following is an exclusive interview with Jeffy Ruby . Albert : How did you come up with the idea of a pizza book? Jeff Ruby : The idea was pitched to us by Emmis Books, and we ran with it. Our idea was to make it as accessible as possible. That's where all the sidebars came in-we tossed in every goofy pizza-related idea that was interesting. Where else could we could talk about our favorite pizza moments on Seinfeld , or give props to the pizza ...

Ed LaDou Dies: Pizza Community Grieves

Image
Ed LaDou , Pizzaiolo I sadly received the news, Ed LaDou had passed away. There were many tributes and praises given to Ed. Each one, well deserved. Ed LaDou , was the pizzaiolo, who saw the endless possibilities of pizza. He took pizza to new levels of creativity. He was a true original. He is credited with creating the pizzas at Spago's , Wolfgang Puck's famous restaurant. " Wolf certainly gave Ed the toppings that he wanted, but it was Ed that ran that department single- handedly in the beginning," said Nancy Silverton , former pastry chef from Spago's . It is no secret, he created the entire menu for California Pizza Kitchen. Larry Flax, co-creator of CPK , explained: "We had Ed come in and work with us at the beginning of the restaurant." Not one to take a back seat, LaDou left CPK soon afterward, and created his own innovative restaurant, Caioti Pizza Cafe. He was able to feature his own pizzas in his own unique style. Adam Kuban , Ne...

Ed LaDou, Legend of Pizza

Image
Ed LaDou, A Pizza Hero I went to lunch with some friends the other day. We ended up at California Pizza Kitchen . Certainly not my first choice, but I was out voted. Not that I have anything against CPK , the pizza there is OK. It's just that when I see the sign, I think it should be called "Ed LaDou's California Pizza Kitchen". Let me explain. Ed LaDou is one of the true unsung heroes of pizza. When CPK was slated to open, the chef quit at the 11th hour. That left a brand new restaurant, without a menu. In a panic, the owner's contacted Ed to put a menu together. He was able to create an extraordinary menu of pizza, pasta and salads. Ed LaDou created the whole CPK concept. He also is credited with creating Wolfgang Puck's pizza menu. Nobody really talks about the fact that Ed is a pizza genius. You can read the whole story by Joan Nathan , right here. It is a fasciating tale of pizza wonderment and adventure. You can see Ed in Pizza, The Movie . This m...
