Here is my totally biased review of Pizza Cuz , a show featured on the cooking channel. Pizza Cuz is a show on the Cooking channel featuring Cousins Francis Garcia and Sal Basile. Sal and Francis from Pizza Cuz Sal and Francis grew up on Staten Island during the time when this remote borough of New York was very much the outskirts of the city. And during the course of the show you are given flashback and insights into how things were for the Cousins as they grew up. These two cousins come from a pizza family, they’ve been in the business for a while. They also opened Artichoke Basille’s in Manhattan in 2008. The basic story focuses on the two cousins traveling around the country try out different kinds of pizza. Cooking Pizza in a Woodfire Oven on the North Shore

You really don't need a woodfired oven to make great pizza. An electric or gas oven will work fine. But if you ever get the opportunity to make pizza in a wood fired oven...jump on the chance. In the following video you will get a taste of some of the pizzas that we recently created on Oahu's North Shore. All of the wood was kiawe wood, a Hawaiian hard wood. The Norht Shore is arguably home of some of the best surfing in the world. You will discover Wiamea Bay, Pipeline and sunset Beach, right down the road. The oven was built by my friend Paul who just had an inspiration that he wanted a pizza oven. not that he knew how to make pizza: he didn't. Paul creates the dough and allows his guests to go crazy with their pizza creations. Believe me everyone was practicing Pizza Therapy . Here's what happened: Pizza Therapy is probably the first pizza-obsessed website I saw on the web. It's like it was always there. But when did you start it? Pizza Therapy started in 1999 on a free hosting service. It ran that way for about a year. I purchased the domain in 2000. After I registered the domain, I moved the site to our own Internet server. It's been evolving ever since. Why did you start it? The site came about as a way to honor my dad. As we were growing up my dad would make pizza for me and my friends. And that is exactly what we discovered during our latest visit to Sally’s Apizza on Wooster Street in New Haven, Connecticut. An inside trick is to get there early. Sally’s opens at 5:00 P.M. (They are closed on Monday’s). We got there at 4:30. There were only two parties in front of us so we knew we would make the first seating. Another trick is to know what you want before your waiter or waitress comes. Make sure you decide what you want. The pizzas at Sally’s come out as they are ordered. Each pizza is lovingly constructed by hand, and that takes time. So the quicker you get your order in the quicker your pizza will come out. A visit to Sally’s is like stepping back in time. Start Spreading the News, Brooklyn Pizza Tour...

"Start spreading the news, I'm leaving today..." OK I'm not leaving today for The City, but soon. (We'll be there in June...) And one of the Big things on our agenda is to go on The Brooklyn Pizza Tour . Honestly I can't wait. I'm looking forward to spending some quality pizza time with Tony Miura, the genius behind the tour. As a matter of fact, our friend, Adam Kuban , over at Slice , reminded us that Tony was featured on the Today Show . This is not the first time I have bought a ticket for The Brooklyn Pizza Tour . But it will be the first time I get to go. Let me explain. We had tickets to go last summer, but  Pizza Therapy  got banned from Brooklyn by Bruce Willis and Tracy Morgan.  True story, you can read about it here. I just got an email from Tony and he assured me all things are go for our tour date,. We're locked, loaded and ready! If we're talking about pizza in Honolulu , now you really got my attention. Kawehi Haug , of The Honolulu Advertiser , organized an incredible event called The Pizza Crawl. A team was assembled to visit six Honolulu pizzerias in one night. These are pizzerias that are buzzworthy and at least have a reputation for making excellent pizza. The team was made up of hard core pizza lovers. Think about it: eating pizza from six different pizza restaurants in one night is no easy task. They were up to the challenge and they completed their mission. There were a few mis-steps along the way. Not by the team mind you, but by one of the restaurants. The real story of Pizza Therapy is all about my Dad. When we were teenagers, he would stop at an Italian bakery on his way home from work and purchase pizza dough. He would then create the most amazing pizzas I ever tasted. His pizzas were more abuot making pizza from the heart. He is the inspiration of Pizza Therapy .... He probably loves pizza. And he would never have any reason to bother with Pizza Therapy . He is after all a mega star. Yeah, that's what I thought, too. But read on. This is a true story. The Pizza Therapy Dough Recipe

Over the years, I've had very good luck with this dough recipe. Feel free to experiment to make the dough that you like best. I have also included in this post a video of the dough making process. Making pizza can be an event enjoyed by one person or shared by a group of people. I have made "pizza for two" as well as given hands-on pizza demonstrations for over 70 pizza fanatics! Making pizza is FUN! Get people involved in your pizza adventure and magic will happen. Tools To make your pizza you need mixing bowls, a measuring cup, measuring spoons, a rolling pin (optional), a pizza pan or cookie sheet or pizza stone, and a cooking thermometer. Ingredients for the Dough (Makes 2 Regular or 4 Thin Neapolitan Pizzas!) • 1 or 2 Packages yeast (2-3 teaspoons of yeast or less) (Try 1-2 teaspoons) (Peter Reinhart says only use as much as you need, you can use less yeast to get good results) • 2 teaspoons honey or sugar (optional) • 4 cups of flour (Can be All purpose or Bread Fl...
