They shared their dream of making pizza. They displayed heart. They showed their passion. Sharlene explained to me she was a professional photographer.  This was her day job. She got paid to take pictures. "Nice job", I thought. He husband was a techie. He designed and created software. They explained the dream was to move to Hawaii and open a pizzeria . They said they were moving to Maui.. Hawaii can always use another great pizza place. But why am I always meeting people who are moving to Maui ? (BTW: If you are coming to Maui, click HERE )  (I tried to explain, that if they were coming to Hawaii, I had great resources, for them. Unfortunately, they already had all the answers...they had no questions. All the answers! Hmm I thought...) I tried to tell them about the Best Book to Read if you a...

Inferno's Pizza Opens at Ward Center

Image
In the last several years there has been a renaissance as far as pizza is concerned. The Artisan Pizza movement has caught up with Hawaii in a big way. Seems like everyone is now interested in creating great pizza. Now these are not pizzerias that are obvious to the everyday person. And visitors to Hawaii will never find them unless you know where to look. I'm happy to share the opening of a new pizzeria at Ward Center, in Honolulu. As you read this Inferno's Wood Fire Pizza will have opened their doors. While not a new operation, these pizzioli, have paid their dues. They are John and Kyle , and until recently they operated a mobile pizza operation. They created pizza that was good, very good. They were relentless in their pizza production. At first they were located in a furniture store parking lot. They slowly built up a reputation as more and more crowds flocked to this outdoor operation seeking out great pizza. It was inevitable to anyone who ate pizza ther...

Inferno's Wood Fire Pizza: Best Pizza in Hawaii?

Without a doubt, some of the best pizza in Hawaii, is being made at 951 North King Street, in Honolulu. The odor of fresh pizza being cooked in an outdoor wood fired oven is unmistakenable. There under a tent, in the corner of a parking lot, you will discover an amazing pizza operation. Two amazing pizzioli are taking authentic Neapolitan to the streets...literally. This is a portable pizza operation. A traveling pizza circus. Complete with all that you would expect and demand of great pizza. And if you are looking for wonderful pizza, you just found it. The owners, Kyle and John , do exude pizza passion . They care about pizza. They care about their customers Each pizza is handcrafted. Each pizza is lovingly created. All the ingredients are fresh. All the pizzas are unique. And the pizza is good. Really good. . For me it is all about the crust. The crust is thin with a slight char and a smoky flavor. J.J. Dolans: Great Pizza in Honolulu

The following is from the Pizza Therapy Pizza Crawl in Honolulu: J.J. Dolan's will tell you right up front: "An Irish Pub, With New York pizza, from two guys in Chinatown". Now it doesn't get any plainer than that. And that explains J.J. Dolan's pizza. The pizza here is rock solid good. you will find a great version of a New york pie. The pizzas are thin crust with plenty of taste in their dough and toppings. The pizza was generously big. Large pizza allows the true tast of the pizza to explode in your mouth. They are not particularly fancy. That is not to say that some of the pizzas were not unusual. There was a great variety. This is blue collar pizza. Aand that was the charm of this pizzeria. You kind of felt you were back in your old neighborhood, rubbing elbows with your best friends as you indulge in your favorite past time: eating pizza. The Pizza Therapy Pizza crew was impressed. Several of their specialty pizzas were sampled. We gave J.J....

First Stop: V Lounge, Honolulu, Hawaii

Image
For the first stop of The Pizza Therapy Hawaiian Pizza Crawl, we stopped at V Lounge. We were there a little early and had a chance to meet Aker , master pizzaiolo and Blaine one of the owners. Aker stretching the dough. It's always great to speak with people who share your own passion for pizza. Aker and Blaine have the passion. We talked about Chris Bianco,   wood fired pizza ovens, New York pizza and also discussed Pepe's and Sally's Apizza (located on Woooster Street in New Haven , Connecticut.)   Aker explained that he was born in New Haven.   Hmm, I wonder if that had something to do with how the pizza turned out. Honestly, I was astounded at their extensive knowledge about pizza. These guys know their stuff. Aker , is a classically trained Chef who only recently started to make pizza. His last job was as a pastry chef at a famous Japanese Restaurant. As a matter of fact he never made pizza commercially until he started making pizza at V...
