Pizza Hydration Secrets Revealed from Tim Huff

Tim Huff knows his pizza flour. As a Master Baker and Educator for General Mills , he teaches a Pizza Crust Boot Camp. This is put on for free for all of the professional pizza makers. He shows pizza makers how to get the best out of their flour. I had an opportunity to talk dough with Tim and he revealed the biggest pizza dough hydration secret I had ever heard. He explains many pizza makers make the a huge mistake in trying to mix water, dry ingredients and oil at the same time. If you do use oil in your dough recipe, make sure you mix the dry ingredients and water first.  allow the dough enough time to hydrate for about a minute or so. Then add your oil to the pizza dough. Oil and water do not mix. The oil will compete with the water to hydrate the dough and you will get a very inconsistent dough. Making a good whole wheat pizza dough is difficult to say the least. Due to the nature of whole wheat flour, the entire process requires addiditonal hydration and patience. Even my friend Peter Reinhart explained. how difficult the entire step by step procedure of making whole wheat pizza dough can be. Our Whole Wheat expert Jon. F. seems to have this process down. 200,000 Pizza Views, Going for a million...

About 2 years ago, I made pizza in my kitchen. I decided to film the process. It was simple, basic and not a lot of bravado. Just me making pizza dough. Something I've done hundreds of times. I then posted it on YouTube and kind of forgot about it. Honestly, if you told me I would have more than a thousand views for my pizza dough video, I would have said you were wacky. Sure people love pizza. People love to eat pizza. They eat it by the truckload. But never in my wildest dreams would I have thought, there would be very many pizza fans interested in making pizza. Well the stats speak for themselves. First a thousand. Then ten tousand. Then tens of thousands. At the end of one year, I had 50,000 views. I was shocked and amazed. That's a lot of pizza fans. I was very impressed with the turn out. I did the dough in my bread machine and it turned out perfect. I cut the dough in half & let it rest covered for 10 minutes. Then I rolled out the dough (which I never do) because I wanted to get it stretched and I didn’t even pre-bake it (no need to). I baked them on my pizza stone adding a few minutes to the time. I did make a few minor changes (less salt in all the recipes). YUMMY!
