The following video was shot recently on the North Shore of Oahu. The North Shore boasts some of the best surfing in Hawaii and the world. Now, the North Shore has some of the best pizza in Hawaii (and the world). Let me explain. My friend Paul created the most wonderful wood fired pizza oven and of course, I had to try it. And I did. Again and again... The oven heats up to an astounding temperature, allowing the pizzas to cook quickly. I love eating pizza and making pizza. I love promoting pizza. Pizza Rustica from Bean

Pizza Rustica This recipe is from the Pizza Therapy Pizza Forum from our good friend, Bean. The dough would work great for a “croissant” style pizza because the crust is so flaky! A keeper around here for sure! Pizza Rustica Crust 4 c. sifted flour 1 1/2 c. lard 1 t. salt 1 egg 1/2 c. water 1 T. vinegar 1 t. sugar Mix flour with lard and salt until flaky (large lumps) In another bowl, whip egg and water, vinegar and sugar. Add liquid ingredients to the flour mixture and together well. Roll out crust and line baking pan (cookie/jelly roll) 10” x 15” with crust. Lining over the sides of pan also. Center Mixture 1 lb. Italian sausage 1 lb. ricotta 1 lb. mozzarella, shredded 8 eggs 2 oz. chopped prosciutto or pepperoni 1 T. chopped parsley Brown sausage, drain. Set aside to cool. Mix ricotta, mozzarella, sausage, eggs, prosciutto and parsley. Thoroughly blend. Pour mixture in crust, fold over excess crust from sides onto top of center mixture. The Pizza Therapy Pizza Party Book

Ever since I created The Pizza Therapy Pizza Book, I have dreamed of a follow up volume. I didn't want my follow-up book to be like the The Pizza Therapy Pizza Book, I wanted it to be completely different. I wanted something that would help pizza fans, celebrate pizza. Of course it would contain recipes, but I wanted it to be more than that. A Pizza Book that would be an operations manual and guide to help with the pizza celebration. Of course you have heard of Chicken Soup for the Soul. It's a book of heart warming tales and stories. Each one unique and wonderful. Each one original. I decided to borrow an idea from the authors of that book. You know they asked for help in writing the book. They wrote some of the book, but not all of the book. Most of the book, was written by other people. Then they went ahead, and with the help of others, wrote a bazillion other Chicken Soup Spin off books. Then I thought: why couldn't I do the same thing? I only want to write one book.....
