7 Top Tips for Making Pizza at Home | Homemade Pizza




Here is a great video which gives some wonderful tips about making your own home-made pizza.

All right. So in Italy guys, pizza is every day. It's not something we're going to home make for a special occasion or because they have an empty Sunday afternoon. They do it every day because it's that approachable. It's that easy.
If you think about the dough, all you need is flour, water, which I know 90 percent of you already have at home, and then a 79 cent packet of yeast. That's how fast the flour comes together, with the yeast, the water, and it makes a homemade dough that's just so much better than buying it anywhere else.
I think the advice here is very sound for anyone who is making pizza for the first time. If you have not worked with dough before you may want to start using a rolling pin (Click on this link to discover rolling pins). However, once you have some experience with handling dough you may find that you can just shape the dough with your hands. Using a rolling pin will de-gas the dough. Shaping the dough by hand takes a little practice and the more you shape the dough by hand the easier it will be to handle.

The biggest take away from this video for me is that you can make great pizza at home.

Hi

I just wanted to take a moment to wish you and your family a Happy Thanksgiving. Here in the USA, Thanksgiving is a time to spend with friends and family. I hope you have a very restful and wonderful Thanksgiving.

I am very thankful for many things. I have a wonderful family.
I am thankful to you for reading my blog posts.... I am also thankful for all of your support over the years.
And I am thankful I can enjoy my favorite food, pizza!

This is an extraordinary video about Dom Demarco that I wanted to share with you.
He is one of the living legends of pizza. He is in his 80's and he still has passion for making pizza.

How to Stretch Your Pizza Dough & How To Use a Pizza Peel





This is a very helpful video on how to stretch pizza dough. While this may have a bit of a learning curve, the more you practice with pizza dough the better you will become. Practice to make your pizza turn into a masterpiece.

If you proofed your pizza dough in the fridge, remember to allow your pizza dough to warm up to room temperature. This is very important if you want to be able to form your dough ball correctly.

In the video, you will notice a six finger technique to initially form the dough ball into the correct shape. I like what Mark Bello suggests at (Pizza A Casa Pizza School). Mark calls the technique, soft bongos, that is lightly tapping your dough ball as you would a bongo drum. Think: "soft bongos" as you get your pizza into the right shape.

After the dough has been shaped you can hand stretch your dough into the correct shape>

Cooking with PMQ: How To Make Pizza Dough w/ John Arena





John Arena of Metro Pizza and UNLV shares his recipe and method for making a New York style pizza dough.


John explains the recipe:
50 lbs of flour
31 lbs of water
2 oz of dry active yeast
16 oz of salt
16 oz of olive oli

Use baker per cents
For example for a 100 lb batch:
100 lbs of flour
62 lbs of water
Start by putting water in dough mixture. you want your dough to come out at 78 degrees
There is a friction factor when you mix.
Dissolve the yeast.
Add salt and add flour...Mix for 8 minutes.
Mix for 4 minutes add olive oil. Mix for another 4 minutes.
Take dough out on table. Cover and let it relax for 10-15 minutes.
divide it, round it and brush with olive oil.
Put it in dough tray and immediately put in the cooler.
Let it stay in cooler 2-3 days minimum.

You can use it after 1 and 1/2 days but it will be at its best as far as flavor, color development, and the ability to work the dough after 2-3 days. Then the dough will be at its peak.

Do not use sugar to accelerate the fermentation or use warm water to make everything happen faster. you want to do everything as slowly as possible to let the flavors and textures develop fully.

Mark Bello Makes New York Style Pizza at Pizza Expo





In this video Mark Bello of Pizza A Casa demonstrates how to make New York Pizza at Pizza Expo

Mark explains he created the pizza dough in his hotel room. He states empahtically that "Las Vegas tap" water makes great pizza.

Mark goes through every step to create pizza. He used a dough press to stretch the dough. This was amazing in itself. I never thought a machine would give a real dough stretch, but this machine totally proved me wrong. You can check out this amazing invention in the first few minutes of the video,.

Mark starts to create the pizza using a spoodle to measure out the sauce he uses on his pizza. This device gives excellent portion control and allows you to use just the correct amount of sauce.

He used

-6 ounces of sauce
- 8 ounces of cheese
- 16 ounces of dough
and a sprinkling of Romano Cheese

In this video I speak with Tom Ianucci of Pietro’s Pizza on Kauai.
The interview was recorded at Pizza Expo in Las Vegas. Tom who is also a Pastor, explains how his journey with pizza started over 30 years ago when he moved to Kauai and could find no great pizza. Tom took it upon himself to not only lear about making pizza but how to start a pizza business. 
Tommy Iannucci moved to Kauai in the 80’s and was distressed to find he could not get a decent slice of his favorite food: pizza.


He went on a pizza quest and made the commitment to learn to make great pizza. At first it was at home in his kitchen, then he built a brick oven in his driveway. He began by making pizza for friends, family, neighbors and anyone else who loved pizza. He made lots of pizzas and most importantly he shared them.
Not satisfied with his skills, he traveled the world learning the craft. As Tommy explains he visited known and unknown pizzerias. He trained in New York, Rome, Las Vegas and even trained in Naples under pizza

Neapolitan Pizza Workflow





Here is a great video about making and stretching Neapolitan pizza dough.



You can watch as the pizziolo stretched the dough and gently pulls it to get the right shape.

You do not want to use a rolling pin to form your pizza dough.

Watch the hand movements in this video which will help you get a good technique to work with the dough.



The pizza maker also reminds you to use a clean surface when you work the dough. You do not want anything on your surface. You need to make sure it is very clean.

Pietro's Pizza, Kauai, Hawaii, Best Pizza on Kauai





If you are
looking for great pizza on Kauai, you need to check out Pietro’s Pizza.

located at the Harbor Mall in Lihue on 3501 Rice Street.

You can
discover a wide variety of New York style pizza as well as authentic Neapolitan
pizza cooked in an actual wood fired oven. Pietro’s is the first (and as far as
I know), only certified Neapolitan pizzeria in the entire state of Hawaii.

I recommend
the Don, which is an authentic New York style pizza.
I was
astounded at the taste of this simple cheese slice. Hey I thought I was in New
York.
Don’t limit
yourself to just one taste as there are many other pizza asventures to choose
from: Maybe you want to sample a cousin of the Don, The Don Ho which is made
with Portuguese sausage and kalua pig.  Or maybe another relative: the Don Pietro:
straight, pepperoni which as you know is an American classic.

In my
experience a pizza place is only as good as the pizza maker or pizzaiolo who
lovingly creates the
